Many people don’t know this but I am actually a very famous recipe maker mainly focused on gourmet meals and high end ingredients. My focus has always been pork ears due to their decadence and rarity. Below is a recipe that gained me second place (bronze) and the Zurich chef’s convention in 1991. I remember it like yesterday and still get shivers when I recollect that glorious almost win. Naturally, this was before cameras and smartphones and unfortunately no photos exist from this affair.
I have recreated it today and it’s exactly as I remember it. Absolutely delicious..
(don’t forget a dash of basil flavored olive oil).
