Whilst waiting for the tripe to boil, we strolled down to the oyster bar.

Nice people here, they mix gin with champagne. Good day today, very good day.

And and!!!

Huge chunk of fresh cow tripe, king oyster mushrooms, enoki and gailan.

Not too sure what’s happening here yet but Fairways on Quadra is the best store ever!

This is a start of something beautiful.

Fresh tendon, pork and beef bone marrow, onion, carrot and leek.  Drowned in some beef stock and off to the pressure cooker they go!!

What else is there to do on a Wednesday afternoon?

A bunch of Polish dudes I just met are throwing a Trance party at Sugar in a few days.  New promoters, new DJs,  new crowd of Polish folks and a night of music I love.
